WHAT WE LOVE

When we think of Mohave Gold, it’s impossible not to crave the cactus & citrus ceviche — charred cactus with grapefruit, avocado, and a kiss of smoked sea salt that tastes like the desert itself. The crispy potato cakes with Canyon Creek mushrooms and hawaij aioli are a little crunchy, a little earthy, and completely addictive. Then there’s the Mojave Veggie Burger, stacked high with a mushroom–black bean patty, citrus date spread, grilled onion, sprouts, and your choice of goat or vegan cheese — a burger that proves plant-based can still be pure indulgence. We’re also hooked on the crepe-style lasagna layered with eggplant, swiss chard, sungold tomato, ricotta, and parm, a desert twist on Italian comfort. And if you want to end on a high note, the charred cauliflower with cashew romesco, quinoa tabbouleh, pistachio dukkah, and tahini ranch is the kind of dish that makes you wonder why every table doesn’t start with pita and a plate of this magic.
